A ‘dark ice cream’ inspired by ‘Star Wars,’ from the world’s best pastry chef

Manila (CNN Philippines Life) — Holding the title for Best Restaurant in the World is hard to come by. When you’ve been ranked as the Best twice, it’s just bragging. Such is the case, however, for famed Girona institution, El Celler de Can Roca, which has been hovering the single digits on The World’s 50 Best Restaurants list since 2009.

The Roca brothers that run the place have become pioneers in the technicalities involved in fusing taste with technique. While El Celler is a family affair, the brothers have made a name for themselves in their respective fields; Joan as a chef, Josep as the Roca sommelier, and Jordi the pâtissier.

The youngest Roca’s inventiveness in the field of pastries is unparalleled. Together with his wife Alejandra Rivas, Jordi Roca put up Rocambolesc, a gelateria that illustrates the capacity of his creative process. Here, there are hot flying saucer ice cream sandwiches, ice cream tubs in flavors like asparagus and truffle (alongside olive oil and toasted bread), and popsicles in ridiculous shapes, like a fat index finger and the bust of iconic Spanish model Andres Velencoso.

CNN Philippines Life sat with Roca to talk about his affinity for sweets, the Roca world tours, and his love for “Star Wars.” Below are edited excerpts from the interview.

What’s your earliest memory of taste?

When I was a little boy, my mother used to make flan, which always has caramel. That’s what is farthest in my memory. But we would also make pears with wine, and apples roasted in the oven. Very traditional things.

You were always drawn to working with sweets then?

When I was 20 years old, I put myself in the kitchen and I found myself more comfortable cooking desserts. I had more space to just … explode!

What was the first idea that exploded out of you then?

It had to do with cigars. The first crazy idea I had was with tobacco. I made an ice cream that tasted of tobacco. And then my brother tried it and said “Oh! Okay…” and that’s when I started.

I’ve had the chance to talk to your brother, Joan, last year. When I asked what you were like, he said you were the crazy one amongst you three. Is there truth in that?

Can be. Maybe. I can also be serious though. There’s a difference in age between us, and it’s normal for older brothers to be older brothers. I think I’m okay though. But yes, [I] can be crazy.

In recent years Can Roca has been closing shop and going on these Roca World Tours, visiting places like Mexico, Argentina, Colombia, and Turkey. Where will the next tour take you?

Not very far from Girona. The next one we will be staying home and exploring Spain, but in more detail.

You and your team have been all around the world, trying different food, and visiting several restaurants. If you could name your top three, in the world, what would those be.

Too many! How about a bargain. Top three, in my home town?

Okay, just this once.

There is Ca l’Enric, which is an institution. There is Compartir. And Can Roca, my mother’s.

Can you tell me about the dark ice cream you created for Rocambolesc?

Aaah, you are a “Star Wars” fan?

Yes, and I’m guessing so are you.

Very much. I like the movies very much. Wait let me show you a photo of the ice cream box.

That is very cool.

Here on the side of the box it says “Helado Oscuro.” In Spanish, lado oscuro means, “the dark side,” but you see it sounds very close to helado, which means ice cream. Together, it is “dark ice cream.”

Wow, hence the tasty tribute to Darth Vader.

Yes! Good way to make something for a favorite movie.

Also very profound connection to get there. How did you like the last two “Star Wars” movies?

Enjoyed it very much. It really felt so much like the original three movies, which was missing so much in those other ones.

“Episode I” especially.

Pointless. You know who I don’t like? The one with the big ears.
